Operation Skinny Jeans: Week Three

This past week has been tough. I’ve been to the gym every single day except for Sunday, I’ve eaten all the right things, and I haven’t cheated once. Yet I still can’t seem to lose weight. My mom told me to not look at the numbers on the scale and to focus on how I feel in my clothes. The only time I felt better in my clothes was yesterday when I put on a pair of leggings and I didn’t have to fight to pull them up. So baby steps, I guess. The appearance of The Kraken (see here for that reference) this week probably isn’t helping much either. I’m upping my exercise this week, so I’m hoping I see some more results soon.

This week I had a craving for pasta. Unfortunately, pasta is not really that diet friendly. But this spin on pasta is good for you and delicious!

Broccoli and Chickpea Pasta



You need:
8 oz pasta (I used a box of Ancient Harvest quinoa rotelle, making it gluten free)
4 cups broccoli florets
1 ½ cup chicken broth (sub chicken flavored broth if you want to make it vegetarian)
4 tbsp all purpose flour
2 tbsp extra virgin olive oil
8 large cloves garlic, minced
¼ tsp dried rosemary
4 tsp red wine vinegar
¼ tsp salt
½ tsp freshly ground pepper

Then you:
Bring a large saucepan of water to a boil. Cook pasta for 6 minutes. Add broccoli and continue cooking, stirring occasionally, until the pasta and broccoli is just tender, about 3 minutes more. Drain. Rinse and dry the pot.

Whisk broth and flour in a small bowl. Heat oil in the pot over medium-high heat. Add garlic and rosemary and cook, stirring, until fragrant, 30 seconds to 1 minute. Whisk in the broth mixture. Bring to a simmer, whisking constantly, until it thickens. Add chickpeas, vinegar, salt, pepper and the pasta mixture. Cook, stirring constantly, until heated through and coated with the sauce, about 2 minutes.

Calories: 395
Serves: 4

Voila! Curb your pasta craving with less carbs and more greens. Delish.

I also wanted to share with you a few of my favorite low calories snacks.

Kettle Brand Bakes Potato Chips  – Tastes like a regular kettle chip, but is only 120 calories a serving (20 chips). Tastes so good it feels like I’m cheating.

Wallaby Greek Yogurt - This stuff is SO delicious. Best Greek yogurt I’ve ever had, and I’ve tried a lot of brands. This is the perfect mid morning snack with 12g of protein to tide you over until lunch.

Chip’Ins - I have yet to see the elusive Buffalo Wing and JalapeƱo Ranch in stores, but the White Cheddar and I are very well acquainted. With 130 calories for 18 chips (they’re pretty big), these are my favorite night time snack.

Oikos Frozen Greek Yogurt  - Sometimes you need to get an ice cream fix. This stuff fulfills your craving with much less guilt. I love the Super Fruits flavor. A mix of pomegranate, raspberry, and acai with 110 calories a serving and zero fat, this is the perfect fit for your sweet tooth.

If you aren’t on MyFitnessPal, get on it! Dieters who log their food intake lose 6 lbs more than people who don’t. I really like having it in one place so I can maintain accountability for what I eat. I also use the notes section to note how I feel every day. I log things like migraines, energy levels, etc.

I once told a girl in high school that you are the skinniest the week after your period. I have no idea if that's true, but it made her feel better.

I didn't know that Oikos made frozen Greek yogurt. I have to try that!

Me and cardio kick boxing got in a fight last. So much that I didn't even blog today. I hate this crap but I want bikini's and skinny jeans and lace shorts and shinny tan legs and oh god I am also delusional.

You are doing great - don't give up! When you don't really need to loose excess amounts of weight, it takes your body 3-4 weeks to process those changes sometimes. You will start to see the benefits soon - promise!

You are doing great!! Don't overwork yourself too much! I know it's hard to 'lose' weight and I really wish our did a better job of promoting health and not skinny. I have to really retrain my mind not to get soooo caught up losing weight. Just remember you are making a lifestyle change and YOU ARE DOING AMAZING!!

i dont do greek yogurt. did you know this? theres something about the texture. maybe i've just had bad greek yogurt. and now i want frozen yogurt.

I don't "do" anything Greek really. Especially yogurt. Soooo thick I want to die.

But you keep on this fitness train you're doing awesome! I can't say your dinner pics entice me into trying it out but you're about one week shy if it becoming a habit so keep going!

Hey it's the baby steps, and don't forget muscle weighs more than fat, so you're just exchanging some fat for some muscle, so that's why your leggings fit a little bit better but you didn't see the scale budge. At least that's what I tell myself when I'm trying to lose weight and I'm working out like a fiend!

Stick with it! You should also consider measuring your waist, arms, legs, etc. A few years ago, I was trying to lose weight, and some weeks I didn't see the scale move, but I could still see progress with the other measurements!

Thanks for this! I had no idea what to make for me and my guys until just now :-)
I never weigh in. I HATE the scale. It makes me feel more uncomfortable than working out in a sports bra and bike shorts in front of a bunch of men LOL. I like to take my measurements..biceps, thighs, hips and waist. And I only measure every 3 weeks or so :-)
I have all the intention in the world to use myfitnesspal but I always forget LOL. I do keep a workout/food journal that I have been writing in for a year now.

So I'm not even sure I'm trying to lose weight (who isn't) but I'm tracking. Being accountable for all the crap that goes in my mouth sure has been a wake-up call. Now go make those brownies GOOOO

I have been having a mad mexican food craving. Like our ghetto fast food mexican food places that cook everything in lard and pile on the cheese. I AM DYING.

I admire your dedication! I need to check out the Oikos frozen yogurt! My ice cream-ish snack has been the Edy's pomegranate juice bars. Super sweet, but then I end up craving something salty. Vicious cycle.

And My Fitness Pal is definitely the way to go! I've been doing that and working out and actually lost about 10 lbs. Plus I just feel good in my own body now!

If you are working out a lot, don't forget that muscle weighs more than fat, so that could be why you aren't seeing the numbers go down.

You've definitely motivated me to start eating healthier, thanks to all your tweets!
I feel much more accountable for things with My Fitness Pal, since ya'll will know when I go over calories!
(umm... where did that "ya'll" just come from?)

I second Alissa. The week after your period is the best.

I am making this pasta immediately. So much drool. Except I'll have to fight myself not to smother it in cheese.

I love the Kettle Baked Potato Chips! James brought them home recently, and I'm hooked. I've had Wallaby greek yogurt before and it's good. I need to find everything else.
